Ingredients

  • 1 Tbsp annatto oil
  • ¼ cup diced yellow onion
  • ¼ cup red bell pepper, seeded & diced
  • ¼ cup green bell pepper, seeded & diced
  • ¼ cup yellow bell pepper, seeded & diced
  • 1 crushed garlic clove
  • 1 tsp Sofrito
  • 4 cups jasmine rice
  • 1 cup diced bistec (beef steak)
  • 1 cup fried sweet plantains, diced
  • 2 cups stewed pink beans
  • 2 Tbsp fresh chopped cilantro

Directions

  • In a large skillet over medium-high heat, add the annatto oil and let it warm.
  • Add the diced onions, red, green, and yellow bell peppers, garlic, and sofrito. Sauté until fragrant and the vegetables begin to soften.
  • Add the cooked rice, diced bistec, and diced sweet plantains to the skillet. Stir well to ensure the ingredients are evenly mixed.
  • Pour in the stewed pink beans, making sure the rice is coated in the bean broth. Stir gently to combine.
  • Sprinkle the chopped cilantro over the rice mixture and stir once more.
  • Remove from heat and serve warm, garnished with additional cilantro if desired.
