Biko

Biko is a fan-favorite Filipino dessert that is typically served during the holidays. It’s a sweet rice cake made with coconut milk and brown sugar. It is traditionally placed over banana leaves and garnished with “latik” which is coconut curds.

This recipe stars U.S.-grown medium grain rice and comes to us from our friend Dahlenie of @saltandgrindkitchen in partnership with USA Rice and thefeedfeed.

Ingredients

  • 1½ cup medium grain rice
  • 2½ cups coconut milk
  • 1½ cup brown sugar
  • coconut flakes

Directions

  • Cook medium grain rice according to the package
  • In a pan, cook coconut milk and brown sugar on medium-low heat. Stir to prevent sugar from burning
  • Cook down until the sauce is caramelized. Turn the heat off
  • Remove ¾ cup of sauce and set aside
  • Add cooked rice to the pan and mix with the remaining sauce
  • Add rice mixture to a baking dish and spread evenly
  • Add ½ cup of remaining sauce on top
  • Let the rice cake set for 10 minutes, then add coconut flakes on top
