Kimchi Breakfast Rice

Ingredients
Fried Rice
- 7½ cups bacon, chopped
- 5 cups Breakfast Sausage
- 7½ cups red onion, ¼ diced
- 3¾ tbsps garlic, minced
- 22½ cups cooked long grain rice
- 15 tbsps cajun seasoning blend, chopped
- 5 cups kimchi, chopped
- 15 ounces eggs, scrambled
- 2½ tbsps Salt
- 2½ tbsps Pepper
- ⅓ cup oil, divided
- 5 cups green onions, chopped
Cajun Seasoning Blend
- 5 tbsps smoked paprika
- 10 tsps oregano
- 5 tsps cayenne
Directions
Fried Rice
- Render bacon and sausage fat over medium-high heat.
- Add vegetables and cook 3-4 minutes.
- Add and heat half of the oil, then add rice to the pan. Cook 5-7 minutes, or until the rice takes on the color of the spices. Add the cajun seasoning and stir.
- Add the remaining oil to a separate, non-stick pan and scramble the eggs until the whites are fully set.
- Thoroughly mix the eggs with the rice. Season with salt and pepper, then garnish with green onion.
