Egg & Avocado Rice Waffles

Ingredients

Sushi Rice Waffle

  • 1 cup short grain rice or sushi rice 
  • 1½ cups water 
  • 1 tsp salt
  • 1 egg
  • 1½ tbsp rice vinegar 

Toppings

  • Sliced avocado
  • Fried egg
  • Sriracha
  • Scallions
  • Sesame seeds 

Directions

  • Add rice to a pot with the water. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes until all the water is absorbed.
  • Remove from flame and season with the rice vinegar and salt.
  • Let the rice cool for 10 minutes then transfer it to a bowl and mix in 1 egg.
  • Heat your mini waffle maker and grease with a little cooking spray. Scoop about ⅓ cup rice into the waffle maker and flatten it down. Cook for about 5-6 minutes. Repeat with remaining rice.
  • Top with your desired toppings.
