Egg & Avocado Rice Waffles

Ingredients
Sushi Rice Waffle
- 1 cup short grain rice or sushi rice
- 1½ cups water
- 1 tsp salt
- 1 egg
- 1½ tbsp rice vinegar
Toppings
- Sliced avocado
- Fried egg
- Sriracha
- Scallions
- Sesame seeds
Directions
- Add rice to a pot with the water. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes until all the water is absorbed.
- Remove from flame and season with the rice vinegar and salt.
- Let the rice cool for 10 minutes then transfer it to a bowl and mix in 1 egg.
- Heat your mini waffle maker and grease with a little cooking spray. Scoop about ⅓ cup rice into the waffle maker and flatten it down. Cook for about 5-6 minutes. Repeat with remaining rice.
- Top with your desired toppings.
