Rice N’ Peas

Our Rice N’ Peas recipe is a Jamaican staple and a quick and easy dish that is perfect for any occasion.

Ingredients

  • 2½ cups medium-grain rice
  • 2 cups light coconut milk
  • 1½ cups water
  • 3 garlic cloves
  • 1 stalk of scallion
  • 1 small onion, chopped
  • 2 sprigs of thyme
  • 6 allspice berries
  • 1 can of red kidney beans
  • ½ tsp salt
  • 1 small scotch bonnet pepper or habanero pepper

Directions

  • Combine coconut milk and water in a pot and boil over medium to high heat.
  • Add cloves, scallions, onion, thyme, allspice berries, red kidney beans, and salt, and stir well.
  • Stir in rice and pepper.
  • Remove from the heat and let steam for 5-10 minutes.
