Ingredients
- 2½ cups medium-grain rice
- 2 cups light coconut milk
- 1½ cups water
- 3 garlic cloves
- 1 stalk of scallion
- 1 small onion, chopped
- 2 sprigs of thyme
- 6 allspice berries
- 1 can of red kidney beans
- ½ tsp salt
- 1 small scotch bonnet pepper or habanero pepper
Directions
- Combine coconut milk and water in a pot and boil over medium to high heat.
- Add cloves, scallions, onion, thyme, allspice berries, red kidney beans, and salt, and stir well.
- Stir in rice and pepper.
- Remove from the heat and let steam for 5-10 minutes.
