Vegetable Pork Stir-Fry

Ingredients

  • ¾ pound pork tenderloin, cut into strips
  • 1 tablespoon vegetable oil
  • 1½ cups fresh mushrooms, sliced
  • 1 large green pepper, cut into strips
  • 1 zucchini, thinly sliced
  • 2 ribs celery, sliced
  • 1 cup carrots, thinly sliced
  • 1 clove garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons reduced-sodium soy sauce
  • 1½ tablespoons cornstarch
  • 3 cups hot cooked rice

Directions

  • Brown pork strips in oil in large skillet over medium-high heat.
  • Push meat to side of skillet. Add mushrooms, pepper, zucchini, celery, carrots and garlic; stir-fry approximately 3 minutes.
  • Combine broth, soy sauce and cornstarch; add to skillet and cook until thickened.
  • Serve over rice.
