Butternut Squash, Sausage, & Rice Soup

Ingredients

  • 1 pound ground Italian sausage
  • 1 tbsp olive oil 
  • 1 yellow onion, sliced
  • 1 (32oz) carton chicken broth
  • 1 large butternut squash, cut into cubes
  • 2 cloves garlic, minced
  • 3 cups chopped kale 
  • 2 cups basmati rice, cooked
  • ¼ tsp seasoned salt
  • ½ tsp paprika
  • ground pepper to taste

Directions

  • Add 1 tablespoon of olive oil to a large pot over medium heat. Add in the onions and Italian sausage. Cook until the sausage is cooked through, and the onions are slightly translucent. 
  • Pour in chicken broth and add in the butternut squash and garlic. Cover and reduce to a simmer, cooking for about 20 minutes or until the butternut squash is tender. 
  • Next, add in the kale and the cooked U.S-grown basmati rice. Stir, cover, and cook for an additional 5-7 minutes, or until the kale is tender. 
  • Season with seasoned salt, paprika, and pepper to taste. Enjoy!
