Ingredients
- 1 cup long grain white rice, uncooked
- 1 pound 93% lean ground beef
- 1 cup chopped onion
- 3 cups beef broth, divided use
- ¼ cup ketchup
- 2 teaspoons Worcestershire sauce
- 2 ounces reduced-fat or regular cream cheese, cut into small pieces
- ½ teaspoon prepared yellow mustard
- ¼ teaspoon salt or to taste
- ¼ teaspoon black pepper or to taste
- 8 ounces (2 cups) shredded reduced-fat or regular sharp cheddar cheese, divided use
Directions
- Place a large skillet over medium-high heat, add beef and cook until brown, about 4-5 minutes, stirring occasionally.
- Add the rice, onion, 2 cups of the broth, ketchup, and Worcestershire sauce to the browned beef in skillet. Stir until well blended. Bring to a boil, reduce heat, cover, and simmer 15 minutes or until liquid is absorbed.
- Remove from heat, stir in the remaining 1 cup broth, cream cheese, mustard, salt, black pepper, and all, but ½ cup of the cheddar cheese. Stir until cheese melts. Sprinkle with remaining cheese.
Recipe Notes
