Crispy Rice Waffles

These rice waffles are as fun to eat as they are to make! Just add your sushi rice to a waffle maker and then customize the toppings to your own sushi preferences.

Ingredients

  • 1 cup sushi rice or short grain rice, cooked according to package instructions
  • 2 tbsp rice vinegar, divided
  • ½ tbsp sesame oil
  • 1 tbsp mirin
  • 1 tsp sea salt
  • cooking spray
  • 6-8 ounces sushi-grade tuna, chopped into small cubes
  • 1 tbsp soy sauce
  • ½ tbsp sriracha, plus more to garnish
  • wasabi, optional, to taste
  • 1 tsp sesame seeds
  • kewpie mayonnaise, for garnish⠀
  • ½ cup cucumber, finely diced
  • green onion for garnish, thinly sliced⠀
  • 1 nori sheet, crumbled into pieces

Directions

  • In a large bowl, combine cooked sushi rice with 1 tablespoon rice wine vinegar, sesame oil, mirin, and salt. Mix to evenly coat rice.
  • Heat a small waffle maker & grease with cooking spray. Fill the waffle maker with half of the rice mixture, and cook in the waffle maker until golden brown and crispy. Repeat with the other half of rice and set the rice waffles aside.
  • In a large bowl, combine tuna cubes, 1 tablespoon rice wine vinegar, soy sauce, sriracha, and honey. Mix well.
  • Assemble the waffles. Put small dollops of wasabi into the waffle crevices if you like, then top the waffles with the tuna mixture. Sprinkle sesame seeds on top of the tuna. Drizzle on kewpie mayonnaise and additional sriracha, if you like. Add on the diced cucumber, sliced green onion, and nori sheet crumbles. Enjoy!
