Curry Coconut Lime Chicken Skillet

This easy weeknight dinner adds a little lime zest to curry spices with chicken thighs to make a delicious, balanced dinner.

Ingredients

  • 1-2 tbsp of ghee
  • 4-6 boneless chicken thighs
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • ½ cup chicken broth
  • 1 (12 ounce) can of full fat coconut milk
  • ¼ cup fresh lime juice
  • 1½ tsp curry powder
  • salt and pepper, to taste
  • ¼ cup chopped cilantro
  • 2-3 cups basmati rice, cooked

Directions

  • Heat the ghee over medium-high heat in a large cast iron skillet. While the cast iron skillet is heating, season the chicken thighs with salt and pepper.
  • Once the cast iron is hot, place the chicken into the skillet and cook for about 4 minutes without moving them, or until a brown crust has developed. Flip each chicken cutlet and cook another 4 minutes until crust is formed on the other side and the chicken is mostly cooked through. Transfer to a cutting board and slide into cubes or slices, per your preference.
  • Add onion, garlic, and ginger to the skillet and cook on medium until onions are translucent. You can add more cooking oil or ghee at this step if needed. Cook for 3-5 minutes.
  • Deglaze the skillet with chicken broth and scrape all brown bits from the bottom of the skillet. Add in your coconut milk, lime juice, and curry powder. Add additional salt if desired.
  • Simmer the sauce for 5-7 minutes, or until thickened.
  • Add your sliced chicken thighs to the coconut milk mixture and simmer for an additional 10 minutes.
  • Add fresh cilantro and a squeeze of fresh lime and serve over a serving of your favorite U.S grown long grain rice such as basmati.
