Dessert Nigiri
Don’t underestimate this dish! Our Dessert Nigiri is a sweet and flavorful take on classic nigiri that makes for an easy dessert or snack that is perfect for summer.
This recipe stars U.S.-grown short grain rice and comes to us from our friend Dixya of @foodpleasurehealth in partnership with USA Rice.

Ingredients
- 1 cup short-grain rice
- 1¼ cups water
- ¼ cup coconut milk
- Honey or vanilla extract, optional for flavoring
- Assorted sliced fruits such as strawberries, mangoes, kiwi
- Fruit Jam, for brushing on rice to help keep fruit slices in place
- Chopped mint or basil, honey/maple syrup for garnish
Directions
- In a medium saucepan, combine the rice with the cold water and bring to a boil over a high heat. Cover and cook over a low heat for 12 minutes (or according to rice packet instructions). The rice should be tender and the water absorbed.
- Remove from the heat but keep covered and stand for 15 minutes.
- Alternatively, if you have a rice cooker, that can be used to cook the rice.
- Transfer the rice into a tray and gently.
- Stir in coconut milk, sweetener/vanilla extract until evenly combined.
- Take spoonfuls of rice, one at a time, and shape into ball then form into oblong piece as shown in the video. Press firmly but gently without squashing the rice.
- Add a piece of sliced fruit, apply just enough pressure to secure it in place.
- Repeat with the rest of the fruits. Garnish with chopped herbs and honey/maple syrup before serving.
- Enjoy right away.
