Dessert Nigiri

Don’t underestimate this dish! Our Dessert Nigiri is a sweet and flavorful take on classic nigiri that makes for an easy dessert or snack that is perfect for summer.

This recipe stars U.S.-grown short grain rice and comes to us from our friend Dixya of @foodpleasurehealth in partnership with USA Rice.

Ingredients

  • 1 cup short-grain rice 
  • 1¼ cups water 
  • ¼ cup coconut milk 
  • Honey or vanilla extract, optional for flavoring 
  • Assorted sliced fruits such as strawberries, mangoes, kiwi 
  • Fruit Jam, for brushing on rice to help keep fruit slices in place
  • Chopped mint or basil, honey/maple syrup for garnish 

Directions

  • In a medium saucepan, combine the rice with the cold water and bring to a boil over a high heat. Cover and cook over a low heat for 12 minutes (or according to rice packet instructions). The rice should be tender and the water absorbed.
  • Remove from the heat but keep covered and stand for 15 minutes.
  • Alternatively, if you have a rice cooker, that can be used to cook the rice.
  • Transfer the rice into a tray and gently.
  • Stir in coconut milk, sweetener/vanilla extract until evenly combined.
  • Take spoonfuls of rice, one at a time, and shape into ball then form into oblong piece as shown in the video. Press firmly but gently without squashing the rice.
  • Add a piece of sliced fruit, apply just enough pressure to secure it in place.
  • Repeat with the rest of the fruits. Garnish with chopped herbs and honey/maple syrup before serving.       
  • Enjoy right away. 

Recipe Notes

It’s recommended to brush the top of each piece of rice with jam and top with a fruit slice so it stays in place firmly.
