Fresh Summer Rice
A perfect and colorful dish for summer, our Fresh Summer Rice is packed with flavor and pairs with your favorite protein.
This dish stars U.S.-grown basmati rice and comes to us from our friend @theconsciousnutritionist in partnership with USA Rice.

Ingredients
- 1 cup basmati rice
- ½ cup cilantro leaves (fresh)
- ½ cup parsley leaves
- 2 cloves garlic, minced
- 1 green chili, chopped (optional)
- 1 tsp cumin seeds
- ½ tsp ground coriander
- ¼ cup coconut cream
- 2 cups chicken broth
- salt to taste
- lime juice (optional, for serving)
Directions
Make the Green Sauce
- In a blender or food processor, combine the cilantro, spinach (if using), garlic, salt, pepper, cumin, coriander and chicken broth.
Cook the Rice
- Add rice to an pot or rice cooker.
- Top with green sauce and stir
- Cook rice per package instructions.
- Fluff the rice with a fork, and squeeze a little lime juice over the top, if desired, for added freshness.
- Serve the green rice hot as a side dish, garnished with additional fresh cilantro or a dollop of yogurt.
