Fresh Summer Rice

A perfect and colorful dish for summer, our Fresh Summer Rice is packed with flavor and pairs with your favorite protein.

This dish stars U.S.-grown basmati rice and comes to us from our friend @theconsciousnutritionist in partnership with USA Rice.

Ingredients

  • 1 cup basmati rice 
  • ½ cup cilantro leaves (fresh)
  • ½ cup parsley leaves
  • 2 cloves garlic, minced
  • 1 green chili, chopped (optional)
  • 1 tsp cumin seeds
  • ½ tsp ground coriander
  • ¼ cup coconut cream
  • 2 cups chicken broth
  • salt to taste
  • lime juice (optional, for serving)

Directions

Make the Green Sauce

  • In a blender or food processor, combine the cilantro, spinach (if using), garlic, salt, pepper, cumin, coriander and chicken broth.

Cook the Rice

  • Add rice to an pot or rice cooker.
  • Top with green sauce and stir
  • Cook rice per package instructions.
  • Fluff the rice with a fork, and squeeze a little lime juice over the top, if desired, for added freshness.
  • Serve the green rice hot as a side dish, garnished with additional fresh cilantro or a dollop of yogurt.
