Grilled Pineapple Chicken & Rice

Ingredients
- 2 boneless, skinless chicken breasts, sliced in half lengthwise
- ½ cup pineapple juice
- 2 tbsps honey
- 3 tsps garlic powder
- 1 tsp paprika
- 2 tsps dried parsley
- 2 cups cooked medium grain rice
- 1½ cups canned pineapple chunks
- ¼ cup chopped green onions
- Salt and pepper to taste
- Cooking oil
Directions
- In a small bowl, whisk together the pineapple juice, honey, 1 teaspoon of garlic powder, ½ teaspoon of paprika and set aside.
- Season the chicken breasts with 2 teaspoons of garlic powder, ½ teaspoon paprika, 2 teaspoons parsley, and salt/pepper.
- Preheat your greased stovetop grill or outdoor grill to medium-high heat. Grill the chicken for about 5-7 minutes on each side, brushing with the pineapple mixture frequently until fully cooked and nicely charred.
- Heat a large skillet with a bit of oil over medium heat and add in about 1 tablespoon of cooking oil. Add the pineapple chunks and cook until caramelized and golden brown.
- Add the cooked medium grain rice to the skillet with the caramelized pineapple, and toss in the chopped green onions and season with salt, pepper to taste. Stir everything together until well combined and heated through.
- Serve the grilled chicken over the pineapple rice and top with green onions. Drizzle with any remaining pineapple glaze for extra flavor and enjoy.
