Italian Brown Rice Salad

Ingredients
- 3 cups cooked medium grain brown rice
- 8 ounces prepared marinated bocconcini* with sun dried tomatoes, coarsely chopped
- ½ cup hot capicola ham, finely chopped
- ½ cup prosciutto, finely chopped
- ⅓ cup pine nuts, lightly toasted
- 2 tablespoons fresh basil, finely chopped
- pinch of red pepper flakes
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
Directions
- In a large bowl combine the rice, Bocconcini (including the marinade), Capicola, Prosciutto, pine nuts, basil and red pepper flakes. Season the salad with the salt and pepper; serve at room temperature.
Recipe Notes
Marinated Bocconcini is mozzarella balls and usually sun-dried tomatoes in an Italian dressing. It is usually found in the deli section of most large supermarkets.Nutrition Facts
