Mimi’s Southern Rice Dressing

Ingredients

  • 6 cups prepared cornbread, crumbled
  • 3 cups cooked U.S. Jasmine or long grain white rice
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 1 bunch green onions, chopped
  • ½ cup parsley, chopped
  • salt and pepper, to taste
  • 2 eggs, lightly beaten
  • 4 ½ cups chicken broth
  • paprika, as desired

Directions

  • Mix cornbread crumbs and cooked rice. Add chopped raw vegetables to rice mixture. Add salt, pepper, eggs and chicken broth. Stir until well mixed and moist.
  • Put into greased 13x9 inch casserole dish. Sprinkle top with paprika. Bake at 350 degrees for 1 hour.

Recipe Notes

For moister stuffing, add ¼ cup chicken broth.
