Mimi’s Southern Rice Dressing

Ingredients
- 6 cups prepared cornbread, crumbled
- 3 cups cooked U.S. Jasmine or long grain white rice
- 1 bell pepper, chopped
- 1 onion, chopped
- 3 stalks celery, chopped
- 1 bunch green onions, chopped
- ½ cup parsley, chopped
- salt and pepper, to taste
- 2 eggs, lightly beaten
- 4 ½ cups chicken broth
- paprika, as desired
Directions
- Mix cornbread crumbs and cooked rice. Add chopped raw vegetables to rice mixture. Add salt, pepper, eggs and chicken broth. Stir until well mixed and moist.
- Put into greased 13x9 inch casserole dish. Sprinkle top with paprika. Bake at 350 degrees for 1 hour.
Recipe Notes
For moister stuffing, add ¼ cup chicken broth.Nutrition Facts
