Pesto Caprese Wild Rice Salad

Reimagine your traditional caprese salad with this nutrient-rice wild rice salad.

Ingredients

  • ¼ cup California wild rice
  • 1½ cups mixed greens
  • 1 tsp pesto
  • ⅓ cup chopped cherry tomatoes
  • ¼ cup fresh mozzarella pearls
  • basil leaves
  • 1 tbsp pine nuts
  • 1 tsp balsamic reduction

Directions

  • Bring a pot of water to boil and cook 1/4 cup California-grown wild rice according to package instructions.
  • Add 1½ cups of mixed greens to a medium-sized bowl along with ¼ cup cooked wild rice, 1 tsp pesto, 1/3 cup chopped cherry tomatoes, and ¼ cup fresh mozzarella pearls
  • Top with fresh basil leaves, 1 tbsp pine nuts, 1 tsp balsamic reduction, and one more drizzle of pesto, and enjoy!
