Pesto Caprese Wild Rice Salad
Reimagine your traditional caprese salad with this nutrient-rice wild rice salad.

Ingredients
- ¼ cup California wild rice
- 1½ cups mixed greens
- 1 tsp pesto
- ⅓ cup chopped cherry tomatoes
- ¼ cup fresh mozzarella pearls
- basil leaves
- 1 tbsp pine nuts
- 1 tsp balsamic reduction
Directions
- Bring a pot of water to boil and cook 1/4 cup California-grown wild rice according to package instructions.
- Add 1½ cups of mixed greens to a medium-sized bowl along with ¼ cup cooked wild rice, 1 tsp pesto, 1/3 cup chopped cherry tomatoes, and ¼ cup fresh mozzarella pearls
- Top with fresh basil leaves, 1 tbsp pine nuts, 1 tsp balsamic reduction, and one more drizzle of pesto, and enjoy!
