Sausage Stuffing Risotto

Ingredients

  • 1 cup arborio rice
  • 1/2 shallot, diced finely
  • 1-2 stalks of celery, chopped finely
  • 1 tbsp olive oil
  • 1 lb. mild italian sausage
  • ⅔ cup white cooking wine
  • 2-3 cups of broth 
  • ⅓ cup of Parmesan cheese, grated
  • 2 tsp each of fresh rosemary, thyme, and sage, chopped and de-stemmed
  • salt and pepper to taste

Directions

  • In a large saucepan, heat the olive oil over medium-high heat. Add shallot and celery and cook until fragrant (1-2 minutes.)
  • Add the italian sausage and cook thoroughly, until no more pink is showing.
  • Add the rice and cook for another 2 minutes until it begins to look translucent.
  • Add the broth and wine gradually, about 1/2 cup at a time. Keep stirring intermittently until the liquid is mostly absorbed. Continue this process until the rice is cooked thoroughly (feels soft, but has some bite). You may or may not use all the liquid!
  • Add salt, pepper, parmesan, rosemary, thyme, and sage. Mix until combined, and enjoy!
