Shrimp and Creamy Spinach Feta Rice

Ingredients

  • 2 tablespoons canola oil
  • ½ cup golden raisins
  • ½ cup red bell pepper, julienned
  • 1 (6-ounce) package fresh baby spinach leaves
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 9-ounces medium shrimp, peeled, deveined, and cooked
  • 3 cups cooked brown rice
  • 3 ounces reduced fat feta cheese crumbles
  • ½ cup almonds, sliced (2 ounces)
 

Directions

  • Heat oil in large nonstick skillet over medium heat. Add raisins and bell pepper; saute 1 minute. Add spinach, salt and pepper; toss until spinach is just wilted. Add shrimp; saute 30 seconds. Add rice and feta cheese. Toss all ingredients until heated through and cheese is soft and creamy. Top with almonds.
