Shrimp and Creamy Spinach Feta Rice

Ingredients
- 2 tablespoons canola oil
- ½ cup golden raisins
- ½ cup red bell pepper, julienned
- 1 (6-ounce) package fresh baby spinach leaves
- ½ teaspoon salt
- ½ teaspoon pepper
- 9-ounces medium shrimp, peeled, deveined, and cooked
- 3 cups cooked brown rice
- 3 ounces reduced fat feta cheese crumbles
- ½ cup almonds, sliced (2 ounces)
Directions
- Heat oil in large nonstick skillet over medium heat. Add raisins and bell pepper; saute 1 minute. Add spinach, salt and pepper; toss until spinach is just wilted. Add shrimp; saute 30 seconds. Add rice and feta cheese. Toss all ingredients until heated through and cheese is soft and creamy. Top with almonds.
