Sushi Boats

Eaters will love these easy to make and nutritious sushi boats! Cut out some of the work of making traditional sushi with these fun to make boats.

This recipe stars U.S.-grown short grain rice and comes to us from our friend @alexawhatsfordinner in partnership with thefeedfeed and USA Rice.

Ingredients

  • 6 ounces sushi-grade tuna, cut into 1/2-inch cubes
  • 1 tbsp kewpie mayonnaise
  • 1 tbsp sriracha
  • 2 scallions, finely sliced
  • ¼ cucumber, diced small
  • 2 ripe avocados, halved and pits removed
  • ½ cup U.S.-grown sushi rice, cooked according to package instructions
  • 2 tbsp soy sauce
  • sesame seeds, for garnish
  • eel sauce, for garnish

Directions

  • In a large bowl, combine the tuna cubes, kewpie mayonnaise, and sriracha. Stir to evenly mix. Add in about 3/4 of the sliced scallions, plus the cucumber. Stir to mix.
  • In the halved avocados, fill the holes with the cooked sushi rice, then pour on the soy sauce. Top with the tuna mixture, then garnish with the remaining scallions, the sesame seeds, and eel sauce. Enjoy!
