Ingredients
Sushi Cups
- 1 cup short grain rice
- ¼ cup vegetable mix (carrots, cucumbers, pepper)
- ¼ cup steamed edamame
- ¼ cup avocado, diced
- 1 tbsp soy sauce (or coconut aminos)
- black sesame seeds
Spicy Mayo
- ¼ cup mayonnaise
- 1 tsp sriracha
- 1 tsp soy sauce
- 1 tsp honey
- ¼ tsp sesame oil
Directions
- Cook 1 cup U.S.-grown short grain rice according to package (typically 1 ½ cups water for 20 mins).
- Press cooked rice into silicone muffin liners & chill for 20 minutes.
- Mix vegetables: ½ cup chopped veggies of choice (carrots, cucumber, pepper, etc.), ¼ cup steamed edamame, ¼ cup diced avocado, and 1 tbsp of soy sauce or coconut aminos.
- Make spicy mayo: ¼ cup mayo, 1 tsp Sriracha, 1 tsp soy sauce or coconut aminos, 1 tsp honey, and ¼ tsp sesame oil.
- Assemble: Add veggies over rice cups then drizzle in spicy mayo and black sesame seeds.
