This tasty recipe stars U.S.-grown short grain rice and comes to us from our friend Mackenzie of @cheerfulchoices in partnership with USA Rice.

Ingredients

Sushi Cups

  • 1 cup short grain rice
  • ¼ cup vegetable mix (carrots, cucumbers, pepper)
  • ¼ cup steamed edamame 
  • ¼ cup avocado, diced
  • 1 tbsp soy sauce (or coconut aminos)
  • black sesame seeds

Spicy Mayo

  • ¼ cup mayonnaise
  • 1 tsp sriracha
  • 1 tsp soy sauce
  • 1 tsp honey
  • ¼ tsp sesame oil

Directions

  • Cook 1 cup U.S.-grown short grain rice according to package (typically 1 ½ cups water for 20 mins).
  • Press cooked rice into silicone muffin liners & chill for 20 minutes.
  • Mix vegetables: ½ cup chopped veggies of choice (carrots, cucumber, pepper, etc.), ¼ cup steamed edamame, ¼ cup diced avocado, and 1 tbsp of soy sauce or coconut aminos.
  • Make spicy mayo: ¼ cup mayo, 1 tsp Sriracha, 1 tsp soy sauce or coconut aminos, 1 tsp honey, and ¼ tsp sesame oil.
  • Assemble: Add veggies over rice cups then drizzle in spicy mayo and black sesame seeds.
