Za’atar Chickpea Rice with Yogurt Sauce

Ingredients
- 1 cup long grain white rice, uncooked
- 1¾ cups water
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1 cup frozen carrot slices
- ¾ cup raisins
- ½ cup chopped green onions (white and green parts total)
- grated zest and juice from 1 large lemon
- 2 tablespoons extra virgin olive oil
- 1 tablespoon Za’atar seasoning
- 1 teaspoon salt
- ¼ cup chopped fresh mint or cilantro
Yogurt Sauce
- 1 cup reduced-fat or regular plain Greek yogurt
- 2 teaspoons Za’atar seasoning
- ¼ teaspoon salt
Directions
- Combine rice, water, garbanzo beans, carrots, and raisins in a large skillet. Bring to a boil, reduce heat, stir, cover, and simmer on low heat 15 minutes or until liquid has evaporated.
- Remove from heat, stir in the green onions, the lemon zest and juice, oil, 1 tablespoon Za’atar seasoning, and 1 teaspoon salt. Sprinkle with herbs. Cover and let stand 5 minutes to absorb flavors.
- Meanwhile, combine the yogurt topping ingredients in a small bowl.
- Top each serving with yogurt topping. If desired, drizzle additional oil over each serving.
Makes 6 cups rice mixture and 1 cup topping total.
Recipe Notes
Za’atar seasoning is a blend of crushed dried oregano, dried thyme, dried marjoram, sumac, and toasted sesame seeds. It is sold in the spice aisle of major supermarkets.Nutrition Facts
